Dutch Oven Ale Braised Tri-tip Beef

This Game of Thrones inspired dish will ease the pain from this epic series coming to an end! 

Method

Step One

Gather all of your ingredients (mise en place). Marinade the beef with 1 tablespoon of olive oil, salt and fresh cracked pepper.

Step Two

Place your dutch oven over high heat for two minutes. Add the remaining olive oil, onions, and shallots. Sweat for 3 – 5 minutes. Add carrots, celery, one tablespoon of salt and ½ teaspoon fresh cracked pepper. Stir the pot until the fond (brown bits of natural sugar from the vegetables) starts to develop on the bottom. Add the garlic and deglaze the oven with all of the ale.

Step Three

While the ale is beginning to reduce, fire up your grill or cast iron pan. You are now ready to sear your marinated beef. No need to add more oil since the beef is already coated. Sear each side until they are all browned.

Step Four

Add the horseradish, thyme and bay leaves to the dutch oven and lower the heat to medium. Let it all reduce for 10 mins then gently place your grilled beef to the stew along with all of the chicken stock. Stir, cover and set the heat to low. Let simmer for at least 2 ½ hours. Check the sauce for salt and pepper, add if necessary. Simply serve over warm white rice or a thick slice of rustic bread with butter.

Serving Recommendation:

Top your beef with more horseradish and try to get a little bit of everything on each spork.  😉

Note:

You can substitute tri-tip for short rib or top round beef.
