Game Day Broiler Chicken Wings
Method
Step One
Preheat the oven broiler to high heat. Season the chicken with all of the spices, in a large mixing bowl. Add olive oil and mix well. Let the chicken marinade at room temperature for about twenty minutes.
Step Two
Line a baking sheet with tin foil (or use a large non-stick baking tray). Rub a small amount of olive oil on the tray to avoid wings getting stuck. Add the wings to the tray. They should not be overlapping or on top of each other. Place the tray on the top rack of the oven (closest to the broiler).
Step Three
After about 7 minutes, you’ll want to check on the wings to see how fast they are cooking. Let them cook for another few minutes before turning each wing over for even coloring. Every oven is different, but my cooking time was a total of 19 minutes. Serve immediately as they are or add your favorite barbecue, hot sauce or honey glaze. For honey glaze, simply mix a quarter cup of honey with a teaspoon of brown mustard and a teaspoon of barbecue sauce. Mix together and add to some of your wings or use as a dipping sauce.
Serving Suggestion
I keep half of my wings the way they are when the come out of the oven so that you can add whatever sauces you like later. The recipe for the Jalapeño BBQ sauce I used can be found here.
