Soft Shell Crab Sandwich

Method

Step One 

Dredge the crabs in potato starch or corn starch. Heat a medium thick bottomed pot over high heat. Add Canola oil to the pot and fry the crabs for about 2-3 minutes on each side. Remove from the pot, set aside and place on a paper towel lined dish.

Step Two

Cut the baguette in half and brush with olive oil. Toast the inside of both pieces in a frying pan until golden brown. Remove the bread from the pan and set aside.

Step Three

Spread the Old Bay Aioli on both halves. Begin to build your sandwich. I started with red onion, followed by cucumber and crab on one side. On the other side I started with pickled habanero, tomato and then red leaf lettuce. Place the tomato and lettuce side on top of the other and eat immediately.

Serving Suggestion

It is very important to have all of your ingredients sliced and ready to go before you start frying, if you wish to enjoy this while its still warm/hot and crispy!
